Sweet potato pudding
Sweet potato is a very underestimated diverse root vegetable which is perfect for this dish. It is now readily available in many communities due to the rise in continental stores.
Four Large sweet potatoes, two small yams peeled and grated, then added to a mixing bowl. Then add up to ¾ of a cup of white self raising flour, 1 teaspoon of baking powder, ½ a cup of sultanas, and a teaspoon of baking powder and mix.
Then get another mixing bowl and add the following ingredients; a can of evaporated milk, 5 cups of coconut milk, add 2 cups of grated coconut, 1 ¼ cup of brown sugar, 3 teaspoons of vanilla essence, ½ teaspoon of nutmeg, ½ teaspoon of salt, ½ cup of sherry, ¼ cup of Jamaican white rum and 2-3 0z of butter. Mix all of these ingredients, well. Then pour this mixture into the potato mix and blend until smooth.
Heat oven on gas mark 3 , 160c, 325f, for about 20 minutes.
Grease large deep tray or two smaller deep trays, then pour all the mixture into the tray. Allow the sweet potatoes pudding mixture to stand for about 30 minutes.
Place in oven for about 1 -2 hours until the centre of the pudding is set from 1 ¼ hours keep checking every 10-15 minutes..
Serve as desired…..hot or cold.
