This is a traditional caribbean dessert. Usually eaten on it’s own but perfect acommaniment to most ice creams, fruits and toppings
Peel and mash 4 speckled bananas, add 3 tablespoons of sugar and mix all ingredients.
In a separate bowl mix 3 eggs, ½ teaspoon of vanilla essence. Also add ½ teaspoon of nutmeg, cinnamon, with a pinch of salt and Lemon then mix.
7 tablespoons of self raising flour is then added into the egg mixture. Add sugar to the mixture fold until all flour has been mix in. When the mixture is firm add the semi skimmed milk. Mixture is now a medium consistency, simular to pancakes you have the perfect mix.
Heat up a small teaspoon of oil in a non stick frying pan or use Fry Light.
Use a large ladle to place small oval shaped portions into pre heated frying pan. Leave the mixture on a low light and cook for about 1 – 2 minutes. Cook on either side till golden brown.
Serve as desired….hot or cold
