Wash chicken pieces in lemon or lime. Place washed chicken into a bowl. Add seasoning to the chicken, a teaspoon of each. The seasoning vary between caribbean communities. Curry powder, garlic powder, dark Soya sauce, turmeric, ginger, thyme and oregano are used in this recipe.
Then slice mushroom, peppers, and onions, add to the mixing bowl. Then stir all ingredient together and leave to marinate for 30 minutes, time permitting.
Pour all ingredient out into a Large oven dish and place chicken pieces out individually. Then add tepid water to the mix and submerge the ingredients and add home made stock.
Cover with foil and place into pre heated oven on Gas mark 6=220c=425f. For 55 minutes ensuring you check every 15 minutes, adding more water if necessary and stir.
Place back in oven for a further hour, then take tray out of oven and add thickener to the mix and stir, place back into oven for a further 15 minutes, then remove.
