Potato and Halloumi Cheese Salad

 

 

Ingredients 

1 packet mixed salad leaves

½ cucumber

4 small potatoes, washed and sliced

250g halloumi cheese, sliced

½ red onion

½ red pepper, sliced

½ tbsp olive oil

 

Dressing

5 tbsp extra virgin olive oil

2 tbsp red wine vinegar

½ tsp mixed grain mustard

pinch of sugar

salt and pepper

Boil the sliced potatoes for 7 minutes, drain and dry on kitchen paper.  Slice and pat the Halloumi cheese dry. Heat a griddle pan with the oil and place as many slices as you can in the pan and fry for 50-60 seconds until golden brown. Flip the cheese over and continue frying until lightly browned on both sides.  Arrange salad leaves on a serving plate together with red peppers, red onions and cucumber.  Add the potatoes and Halloumi cheese and serve.

Place all the ingredients for the dressing in an airtight jar, shake well and add to the salad when ready to serve.
